Peanut Butter Oatmeal Bars













    Cream together:
  • 3/4 cup peanut butter (smooth or crunchy)
  • 3/4 cup butter, softened
  • 3/4 cup white sugar
  • 3/4 cup brown sugar, packed
  • Add:
  • 2 egg
  • 1/4 tsp salt
  • 3/4 tsp baking soda
  • 1 1/2 cup all-purpose flour
  • 1 1/2 cup oats
  • 1 tsp vanilla extract
  • Bake: 325 for 15min once done quickly melt the chocolate layer on
  • Chocolate Layer:
  • 1 cup chocolate chips (milk or semi-sweet)
  • Frosting:
  • 1 cup powdered sugar
  • 1/2 cup sotten butter
  • 1/2 cup peanut butter
  • if to thick ad 3-4 T milk
Instructions
  1. Preheat the your oven to 325 degrees. Use large cookie sheet
  2. In a large mixing bowl, cream together butter and both sugars until smooth. Beat in the egg, peanut butter, and vanilla. 
  3. In a separate bowl, mix together the flour, baking soda and salt.
  4. Stir into the peanut butter mixture. Next, mix in the rolled oats, dough will be stiff. 
  5. Spread dough evenly into the prepared pan and bake approximately 20 to 25 minutes or until the edges are firm but not burnt.
  6. Remove from the oven and immediately sprinkle the chocolate chips in a single layer over the top. Let stand for 5 minutes, then spread to cover. Allow to cool. 
  7. In a small bowl, beat together the powdered sugar, cream cheese, and peanut butter until smooth. Add milk in one tablespoon at a time until desired consistency is reached. Spread over the bars when the chocolate has hardened. (I refrigerated my bars for 10 minutes to harden chocolate layer quicker.)
  8. Store in refrigerator.

Taco Soup


1 lb ground turkey
1/2 medium onion, chopped
1 minced garlic
1 Tbs chili powder
1/2 teaspoon  salt
1/2 teaspoon paprika
1 teaspoon cumin
1/4-1/2 red pepper flakes
2 teaspoon cornstarch
2 cans (14-1/2oz) stewed tomatoes
1 can (15-1/2oz) kidney or small red beans
1 cup frozen corn

Brown Meat add onion and garlic
Mix dry spices, cornstarch & stewed tomatoes.
Add tomato mixture and beans to meat.
Simmer for 10-15 min
Add corn.

Basil Cous Cous Salad


3 cups Spinach/Euro mix
1/3 cup Dried Crasins
1/3 cup grated Asiago Cheese
1/3 cup toasted pinenuts
2 cup white corn
1 pkg couscous olive & garlic

Dressing: Blend in blender
1 cup fresh basil
1 cup mayo
1/2 shallot, chopped
2 Tbs red wine vinegar
1 cup buttermilk

salt and pepper to taste

Happy 5th Anniversary!!!!

I'm really am the luckiest of 5 wonderful years. I can't believe it some times but it's gone by pretty quickly, and each year  does is better. I have learned so much and can't wait to learn more. 

Preston I love you sooooo much, you know I'm not one for words, sentences, grammar or anything to do with trying to express the way I feel into words, but I'll take a swing at it.  I wanted you to know some amazing qualities that I love, adore and come to love/learn from.

Speaking of expressing myself I wanted to let you know that you are the most understanding person I know. You're perfect for me because you understand me. I've love the way you sit back and take it all in and just lay it out logically and coherently. Hopefully I can learn something from you one of theses years. I love how you are humble & modest. This is got to be one of the sexiest traits you have, and you're probably uncomfortable right now but you have accomplish many difficult and hard things, and you're sooooo young. One of the craziest thing about all of this is you also never complain or get to busy for your family. You're so good about taking breaks and spending time with us. Showing your love & care. I've learned that you love to serve others in your on special way. 
You said it best I feel like this is serendipitous, I really didn't know what I was getting into but I'm blown away with what I've got, I'm making desirable discoveries by accident all the time with you. You usually hear its just the opposite for other couples. I just feel so bless. I can't believe how blessed we are. You are truly a spiritual mammoth. I freakin love the fact that you can teach, something I'm inspired by everyday. Not only can you teach the gospel in a loving and simple way, you've shown such greatness that your always teaching at work. You are incredibly intelligent, and so poetic with your words, I can only hope our kids carry the trait. 
Your sense of humor is very clever and unique and I love it that way. PMC!
You treat me with such love, kindness, and craziness all at once and I could not be more attracted to you. You are absolutely handsome in every way and I can't even compare to your attractiveness. You got this perfect amount of everything going on (especially when you got that scruff) and I just want you non stop. I do have to say one of the most rewarding things we have accomplished is having our beautiful boy, Sorence. I could not be happier with that kid. I hope he grows up like just like you and I can't wait to have another child with you.

What can I say you are perfect for me in every way and I have loved these last 5 years. I love you with all my body!
